Abstract

Jackfruit seed contains phenolic compounds that are beneficial for human health. However it is normally regarded as waste and ends up being disposed. Proliferation of commercial jackfruit plantation in Malaysia has driven not just the produce of jackfruit, but the amount of jackfruit seed available. The abundance of jackfruit seed as the raw material can be exploited by extracting its phenolic content. This study aimed at improving the phenolics extraction from jackfruit seeds via the high pressure carbon dioxide assisted extraction (HPCDAE) process by incorporating a stirring effect into the process using a magnetic stirrer. An initial preliminary study to determine the best sample size and extraction time was conducted. The influence of stirring on extraction for varying solid to liquid ratio (RS:L) was determined by measuring the extracts Total Phenolic Content (TPC). Stirring was able to eliminate the sample bed compaction effect in the fine grind sample and the extraction process was significantly expedited. The TPC value for RS:L of 1:30 was significantly increased by 27 under the stirring condition of 250 rotation per minute. The results from this study offer the first insight into the ability of stirring to further improve and expedite the existing HPCDAE process. © 2024 AIP Publishing LLC.
